Sunday Prep Day

Live from the Spin Bike!!
That's right, I'm spinning these legs to work!! I got my days switched, no lifting today just 20 minutes of HARD CORE ABS!! I wanted to get some cardio in though, so I jumped on he saddle.

Prepping' started early with pancakes; regular an multi-grain. Ailea is asking for them daily, so I figured I'd jump on it and be prepared. Then, we went on a crazy cleaning frenzy upstairs; Whew!! Took all morning, drawers organized, laundry in em', bathrooms cleaned, floors vacuumed. Toys organized, bookshelf set up and books in order. bussaayyyyyyy.

The prep continued; chicken, wrap and then zucchini pasta with a fresh "sauce", which is just sautéed mushrooms and tomatoes with your flavor of seasoning. Yum! Yum! Yum!!
I have to pick up a few more ingredients for 2 upcoming snack crackers and hummus. Sooo looking forward to that!!
Another item to this weeks menu; WRAPS!!
Simple, Delicious
Endless Combinations
And, yes I have Fresh Spinach wrapped in a Spinach Wrap
Guess what else I did? Applied to be another ambassador for Girls Gone Sporty, saw a fellow blogger mention it and it seems awesome!! I'm always eager to grow in what I'm passionate about. We will see what happens.

Hello, Clean Eating!!

Clean Eating is among many September Routines/Challenges!!

I'm feeling READY after a few months of research, finding recipes and loading up my "Clean Eating" binder.

After this past month, August, I need this little [big] change, kind of like a body cleanse. And, I'm taking the girls along on the ride with [almost] NO processed foods, like the typical chicken nuggets or corn dogs. I'm sure they will miss them a little and will not like trying all the new things I've got line up on the Meal Plans. It's a new experience we will all get to enjoy, at least I know I will. It'll also be beneficial for the Prep Planning Weekends! School starts this week and I'll have a first grader, who loves taking her own lunch to school, even packing her own lunch. I'm EXCITED!

Happy Clean Eating!!

{these cards always make me giggle}

Day 16; Favorite Meal

What’s your favorite recipe to cook?

Oh, Boy!! This is where it gets interesting. The thing is, I LOVE to cook the "healthier" choices, I've learned over the past 2 years. I cook these more when husband is out of the house.

Here goes it.
Anything with QUINOA is delicious!!

I buy this in bulk from Costco. I follow the cooking directions and it usually is plenty for 3 different meals. I often pre-make it , store for another day or for meal later. SUPER  DELICIOUS!!!

Below are a few of my favorite combinations. They are endless!
  • Sauteed/Fresh Veggies, a variety of Zuchinni, Squash, Bells Peppers, Kale, Spinach
  • Fresh Cilantro
  • Lime
  • Black Beans
  • Tomatoes/Grape Tomatoes
  • Chick Peas
  • Seasoning for a little flavor, garlic, sea salt, pepper, paprika, cumin.
  • Shrimp, Scallops

SWEET POTATOES
  • Wash Potato
  • Peal & Cut in small pieces
  • Put into boiling water, reduce to medium heat
  • Boil for 25-35 Minutes until soft
  • Mash, add a little butter and/or seasonings or just eat plain

GREEK YOGURT
  • NO cooking needed, this is like a desert for us
  • We buy bulk fruit mix from Costco (cherries, promegranate arils, raspberries, strawberries, blueberries), we also use for Smoothies (another favorite).
  • We also use FRESH Fruits instead of Frozen
  • The yogurts vary between Fage Plain & Greek Gods Honey Flavor.
  • We add granola or a nut mix (sunflower seed, almonds, raisins, cashews)
